Cookies


Common

1.    The fat(butter / cream / ghee) + sweet ( jaggery / white sugar / brown sugar / cane sugar) are whisked until the mixture turns creamy and lighter in colour. (everything should be in room temperature)

2.    Add essence and mix

3.    Sift the flour and add it in batches.

4.    Mix everything using sapatula/hand to a nice dough. Add milk/water as required to form dough or as specified in the recipe.Add nuts/tutti frutti if required.

5.    Keep it in fridge (optional)

6.    Roll out the dough in to thin sheets. And cut it in to desired shape.

7.    Pre heat the oven to the degrees mentioned in the recipe and bake it for the time specified.

Note: Atta can be replaced partially or fully by maida.

1.    Atta biscuits
1.    Butter – ½ cup
2.    Caster sugar – ½ cup
3.    Wheat/atta – 1.5 cup
4.    ½ tsp cardamom powder
5.    2-3 tblsp warm milk
Bake: 170 degrees for 10-12 minutes


2.    Atta sesame biscuits
1.    Butter or any veg oil – 4 tsp
2.    Sugar powdered – ½ tsp
3.    Salt – ½ tsp salt
4.    Wheat/Atta – 1 cup
5.    Curd – 2 tblsp
6.    Water – 2-3 tblsp
7.    Roasted sesame seeds – 1 tblsp
Bake : 170 degrees for 20 minutes


3.    Atta tutti frutti biscuits
1.    Cold butter cut into pieces – ½ cup
2.    Sugar – ½ cup
3.    Baking powder- 1 tsp
4.    Wheat/atta – 1 cup
5.    Corn flour- 2 tblsp
6.    Salt – pinch
7.    Essense – 1 tsp
8.    Tutti frutti – 2/3 cup
9.    Milk – 3 tblsp
Bake : 180 Degrees for 10-12 minutes


4.    Masala Biscuits
1.    Butter – 1/3 cup
2.    Sugar – 4 tsp
3.    Salt - 1 tsp
4.    Maida – 1cup
5.    Wheat / atta – 1 cup
6.    Curd- 2-3 tblsp
7.    Green chillies – 5-6
8.    Coriander 3 tblsp
9.    Few curry leaves
Bake : 180 degrees for 8-10 minutes

5.    Malai biscuits
1.    Malai/cream – 1cup
2.    Sugar – 1 cup
3.    Essence – 1 tsp
4.    Atta/wheat – 1 cup
Bake: 200 degrees for 8-10 minutes or 150 degrees for 20 minutes
The mixture will be little runny, so I use a piping bag.

6.    Walnut and Raisin cookies
1.    Butter – ½ cup
2.    Sugar – ½ cup
3.    Essence – 1 tsp
4.    Baking powder – 1 tsp
5.    Maida – 1 cup
6.    Crushed wanluts -1/4 cup
7.    Raisins – ½ cup
8.    Desiccated coconut – ¼ cup
9.    Cold milk – ½ cup
Bake : 160 degrees for 20 minutes


7.    Short crust pastry
1.    Cold Butter – 1 cup
2.    Sugar – ½ cup
3.    Atta flour – 2 Cup
4.    Salt - pinch
Bake : 200 degrees for 8 minutes


8.    Cumin cookies
1.    Butter – 100 gms
2.    Sugar -   2 tblsp
3.    Flour – 1.5 cup
4.    Salt – ½ tsp
5.    Jeera – 1 tsp
6.    Ajwain – ½ tsp
Bake : 180 degrees for 12-15 minutes


9.    Condensed milk cookies
1.    Butter – ½ cup or 115 gms
2.    Sugar – ¼ cup
3.    Essence – 1 tsp
4.    Condensed milk – 200 gms
5.    Flour- 1.5 cup
Bake : 180 degrees for 12-15 minutes


10.  Choco walnut cookies
1.    Cold butter – 100 gms
2.    Sugar – ½ cup
3.    Essence – 1 tsp
4.    Flour – 1 cup
5.    Crushed almonds and cashews – ¼ cup
6.    Coco powder – ¼ cup
Bake: 160 degrees for 10 minutes


11.  Milk powder – Atta cookies
1.    Butter – ½ cup
2.    Sugar – 1/3 cup
3.    Baking powder – ½ tblsp
4.    Baking soda – ¼ tblsp
5.    Milk powder – ½ cup
6.    Flour – ½ cup
Bake:180 degrees for 10 minutes


12.  Choco chip cookies
1.    Butter – 60 gms
2.    Sugar – 3 tblsp
3.    Essence – ½ tsp
4.    Maida- 1 cup
5.    Cornflour -2 tblsp
6.    Baking powder – ½ tsp
7.    Mis 60 gms chopped dark chocolate pieces
Bake : 180 degrees for 15-20 minutes



13.  Cashewnut cookies

1.    Butter – 75gms

2.    Sugar – 50gms
3.    Essence – 1 tsp
4.    Flour- 100 gms
5.    Finely chopped cashews – 2-3 tblsp
Bake : 200 Degrees C for 10 minutes

Other Podi Varieties


Common Process:
In podi recipes...

1.    All the ingredients are roasted separately in the pan with little oil or no oil.
2.    Vary red chilli based on your hotness quotient.
3.    Then add salt and grind it in the mixi to get your podi

1.     Urad dal – 1 cup
2.     Channa dal – ½ cup
3.     Moong dal – 2 tblsp
4.     Ground nuts – 2 handful

2.    Kothamali vara podi (Danya podi) – can be used in sundal and dry curry

3.    Sambhar podi (sun dry all ingredients and give it to machine grinding)

3.    Sambar manjal(turmeric) – 100 gms
